Flatten Rice dosa

 I return from US and my parents move from Delhi to Bangalore. In Delhi, all vegetable vendors would invariably cut the pumpkin or raw jackfruit, when you decide to buy. With that notion in mind, I with a friend visit the vegetable market in a place called malleswaram, buy a medium large raw jackfruit and asked the vendor politely- whether he would cut the jackfruit for me. His reply was Yes- I will cut, add spice and if you like it-cook it all for free….I was so furiously upset. Kept wondering on my way back home-why such a curt reply , when everything could have been dealt with a simple 'No'. Guess I learned from that experience, sometimes a straight forward 'No' is much sweeter than any long conversation. Well, that was my first impression of vegetable market in Bangalore but it certainly was not the last. Dosa which I associate with soaking, grinding and keeping it to ferment for long hours is probably on my culinary list once in a 'No' year. I believe that it is always that the simple- that creates marvelous. So heres is very simple flattened rice Dosa recipe.

Ingredients: 
  • 1 cup rice
  • 1 cup flattened rice/ aval/ poha 
  • Salt
  • Oil
  • Water

 Method:
  • Wash and soak the rice for 2 hrs. You could also soak it in lukewarm water for an hour
  • Wash and soak the flatten rice separately
  • Grind the rice into a smooth batter
  • Add the flattened rice and grind with the rice
  • Add salt 
  • The consistency should be of a pancake
  • Smear some oil on girdle/ flat pan and heat it
  • Add a dollop or two of the batter and spread with a smooth spoon bottom over the pan 
you can always add parsley/ cilantro or add some curry leaves
