Gajar Halwa

Dilli ka thug, dilli ki billi, Dilli -this Dilli -that. A person from Delhi would shrug all those allegations and say its Dilwalo ( people with heart)  ki Dilli. Delhi is my emotional home. I spent almost 15 years in the capital of India, wonder if I could stay in any other place for such a long time, had it not been Delhi. It was Delhi that my parents bought their very first house and made it a beautiful home.
This city surely possess a beautiful heart and would accommodate any person from anywhere.I recall Dec 3rd 1987, my parents left me at their cousin's place at Nehru Place and went on their scooter to Karol Baug to repair their mixer grinder. They had a bad accident, an auto rickshaw apparently was overtaking  from the wrong side. My mother narrates that she in a flash, saw two young boys in their early twenties. One of them attending to my father and  other carrying my mother. My mother just saw his blood stained white shirt before she fell unconscious. When she regained her senses both my parents were in Ram Manohar Lohiya Hospital, well attended to. Well those two boys wherever you are , I cannot thank you enough for saving my parents. May you have everything you wish for. Those two boys are epitome of what Delhi stands for. The mixer grinder started working just fine on its own after all this :) I remember the winter's very pink carrots of Delhi and every household would make Gajar Halwa that time. Its almost offset of winter and I haven't made any Gajar Halwa... better late than never. To Delhi, With love.

Ingredients:
  • 2 cups shredded carrots ( I used my processor)
  • 2 cups milk
  • 3 tablespoons clarified butter ( ghee)
  • 1/4 cup sugar
  • 2 teaspoon sliced almonds
  • 6 raisins
Method:
  1. Boil the carrots with the milk in a large pan on medium heat, keep stirring from time to time
  2. When reduced to half, add sugar
  3. Further reduce and add clarified butter along with sliced almonds and raisins  
      I used orange carrots, Best when Delhi carrots are used
